Marie Speck was on a panel of culinary specialists in Boston for The Culinary Guild of New England, with her book. Her wonderful Biscotti were passed around to about 150 Culinary professionals and enthusiasts and as we watched the trays being passed around and we hoped they would last for everyone to sample. Am important ingredient was the freshly ground whole wheat flour which was not heavy at all! The cookie was light, delicious with a nice crunch.The book puts the tools for such goodness in your hands and lots of information where to get everything that you need.

We have used this cookbook over the last several months more than we've ever used any other cookbook. The recipes are tempting to look at and delicious when created. The pictures are plentiful and useful. Best of all for us, we have used the recipes and techniques in this book as a great reference and guideline for greatly improving our diet.It is important to note, as author Maria Speck does, that she is in no way writing a diet or health book. However, we found the methods of food preparation and the ingredients she uses are all exceptionally well suited to a very healthy, largely (but not slavishly) Mediterranean diet.Who would have thought eating delicious food prepared with ingredients which have been available for thousands of years (until the modern curse of processed sugar and white flour forced them underground) would promote a healthy diet? What a shock.The best thing I like about "Ancient Grains for Modern Meals" is the passion Maria Speck brings to the subject. You definitely get the feeling this was a book she was destined to write because her love for whole grains goes back to her early childhood. Perhaps more important is her Greek/German ancestry has positioned her between two cultures which are very reliant on completely different whole grains for meal preparation.She goes into great detail about the history, cultivation, and preparation of all the grains she uses in the book. This, plus her many years experience with creative cooking and baking have given the book an extraordinary breadth which is greatly appreciated by readers.We did not find the recipes overly complicated and have been successful with every one we have tried. We had more trouble actually securing the ingredients than making the meals. Because we had to actually hunt down several of the grains we needed to make some of the recipes, we have found sources of fresh food and whole grains which we did not know existed in our town. Big score!Our favorite recipes have turned out to be some of the bread recipes. We like the "Aroma Bread with Coriander and Fennel" (although it is a long process to make, it is so delicious!) and the Floating Sesame Loaf (which is a blast to make, if you are into the process of making bread).The best bread recipe we found in the book is the "Pine Nut Bread with Fennel and Sun Dried Tomatoes." It is simple, quick and has so much flavor you could eat it every day! It is fantastic for sandwiches with ordinary deli meat. We take this bread with a flavorful cheese or a herb spread to anything we are invited to and it is always a smash hit. Just a hint on this bread: Since pine nuts and sun dried tomatoes are so expensive we've sometimes substituted slivered almonds and roasted red peppers with excellent and tasty results.We have also really enjoyed the "Spelt Crust Pizza with Fennel, Prosciutto, and Apples." Absolutely wonderful.We do like to make bread, but they are only a small part of the recipe assortment in the book. There are many breakfast, salad, soup, main dish and dessert recipes available. Well over 100 recipes in all.I'm not even going to go into the "Creamy Rotelle with Basil Yogurt and Mozzarella" (use fresh mozzarella!) or the "Parmesan Polenta with Rosemary Oil Drizzle." These are just a few of the many amazing recipes in this collection. Thank you Maria Speck!Hmmm...Now that I'm looking through it, I think we will try "Quinoa Cakes with Smoked Trout and Lime Mayonnaise" tonight. No wait...maybe "Fire Roasted Tomato Stew with Eggplant and Farro."So many choices, so many delicious recipes!

In all fairness I haven't really gotten into this book very deeply yet. I look forward to trying many of the recipes. What struck me as strange was that there was no nutritional breakdown of the recipes. My husband was recently diagnosed with diabetes and counting carbs and fiber is critical. I cook mostly from scratch so I am struggling with adapting my existing recipes to be healthier for him and had truly hoped this book would help which I know it will because they all sound so healthy and nutrious. I also wish there were more pictures with the recipes. I do appreciate all the detail in which the author has gone to describe the ancient grains and until recently, I really didn't know any or many of these things even existed so I am very excited to add these new things into our diet. I am just disappointed and surprised that a book printed today would not have the breakdown I was expecting.

At the first glance, Maria Speck's book not only pleases by its appetizing photos, but, also, by its clear, user friendly design. A mixture of biographical anecdotes, helpful comments and tempting recipes - don't worry, the recipes are the main part - the book is very well written, funny, not only instructive, but also entertaining.Reading it, I had several "Aha" moments - the author (who grew up in Germany and Greece) doesn't shy away from rich ingredients like butter, bacon, or a shot of booze, but believes that "food has to be mouthwatering" and "eating is about pleasure first, and dieting last". And her recipes really live up to that credo!I served the "Brie Cakes with Sun-Dried Tomatoes" to my rather skeptical husband who, after the first forkful, turned into an ardent "believer". The oat based burgers, seasoned with roasted pine nuts, rosemary and sage, were absolutely amazing! Being an avid baker, I also tried the "Greek Walnut-Barley Cake", Lemon-Rosemary Scones" and "Orange Scented Scones with Dark Chocolate" - all were delicious.The instructions are very clear and easy to follow, even for iffier steps (like handling very sticky dough), and, for people like me, who don't like it too sweet, there is no necessity to cut down on sugar or honey - the seasoning is just right.This is really a cookbook that takes the scary (and Puritan!) out of whole grain cooking.

I have added many whole grains to my diet... the challenge has been finding cookbooks to make cooking with and using these grains viable. Thanks to Maria Speck I now have many more ideas on what to do with all of these grains and legumes I have been adding to my pantry. This cookbook does not have as many recipes as I had hoped, but is well balanced between recipes and advice. A great bonus is that the author also includes the weight measurements of many items to make it easier to cook using a scale. You definitely want the hard cover book and not the Kindle edition (in my opinion). I bought the Kindle version first and it just didn't "feel" like a cookbook to me so I had to buy the hardcover. I am so glad I did! The book has wonderful pictures in it and the layout is beautiful. Thank you Ms Speck for sharing your knowledge of these wonderful (and extremely tasty/healthy) foods with the public.

This, for me, was an amazing book. I will be reading it again eventually, just to remind myself of all the important information that J.P.Edwin researched and now shares with readers. It has taken me roughly 30 years to learn many things about myself which are clearly explained by J.P's research. I feel more confident about expressing my needs, now that I know I'm not the only one, and now that I have been reminded about the strengths which balance out my weaknesses.I am definitely a "highly sensitive person". Sometimes J.P. uses terms and concepts that are probably common in psychology, but which seem a bit odd or out of place in the regular world. However, it is definitely worth overlooking any strangeness in order to get to the important information which he presents.

This guide is a decent, thorough guide for empaths, in spite of the fact that I feel it is more qualified for people who may have next to no learning about being an empath. As an empath, I had heard a significant part of the data in this book before from different sources. This isn't to say I didn't get the hang of anything new. She is the daughter of a Greenwich Village shopkeeper, and it is no surprise to her that after spending twenty-plus years practicing graphic design she is now runs a corner store in Brooklyn. Excellent book how the history of the soda jerk and soda fountain came to be from the 1890s to 1940s. This book was a great blend of soda fountain history and recipes for making your own. There's plenty of pictures and interesting tidbits, and the recipes seem solid. It's picture heavy, so I would recommend reading it on a color device, or getting a paper copy.

Back in 2014 the Flint Water Crisis made me furious. When Snyder was elected governor I thought he might be one of those moderates who is fiscally responsible and socially just. But when I (little ol' me!) saw the drinking water coming out of Flint's faucets in 2014 and I heard Gov. Snyder say the water was safe, I spit out the clean water I'd been drinking from my own municipality. It took years, national attention (Rachel Maddow) and moving heaven and earth to get the Michigan Dept of Environmental Quality to even admit there was lead in the water. NO amount of lead is safe. If this had happened in Grosse Pointe where I live, the wealthy people here would've risen up, told their story and would've been listened to. The problem would have been solved within days--not years! The fact that Flint is impoverished make this doubly unconscionable. Reading this book (God bless Mona Hanna-Attisha and Marc Edwards from Virginia Tech), stirred the old fury I felt when it first happened. And that's a good thing. Poor people are getting the shaft on so many levels that shelves of books have to be written on each issue. It's exhausting ME! Don't people understand that if you help people who are disadvantaged it will help everyone? If you give everyone good health care and a good education we'll all pay less in the future? It's so logical I could scream. I'm going to scream, and keep screaming until people treat each other with the respect they deserve. This is one of the most important books of our times.

I liked Dr. Mona Hanna-Attisha after reading just a few pages of her new book, "What the Eyes Don't See." Almost immediately, I started calling her Dr. Mona in my mind, meaning no disrespect by being overly familiar with a woman I have never met, but simply reflecting my growing, and now immeasurable, appreciation for her commitment to do all she could for "her" children -- the kids of Flint, Michigan who were being poisoned by lead in their drinking water. She is a kind person, and the kind of person who I would like to have as a friend, with whom I would like to be on a first-name basis. Not until page 273 did I learn that "Dr. Mona" is what she tells her kids to call her.Dr. Mona is the kind of doctor we all would want for ourselves, and especially for our children, or grandchildren. She is a teaching doctor, smart and professional, a trainer of pediatricians, but sees patients in her clinic as well. She cares about them as for her own. She views it as both a personal and a professional obligation to look out for them. And as a public health professional, she knows the importance of getting ahead of a situation, of protecting children from harm before they show up in clinics and hospitals with symptoms of devastating disease."What the Eyes Don't See" chronicles how Dr. Mona became aware of the Flint water crisis and immediately jumped into a maelstrom of political denial, blame-shifting and responsibility ducking. Using rigorous science and stubborn passion, Dr. Mona and a small circle of her colleagues were finally able to to prod resistant government officials into doing their jobs. Without their activism, the public health crisis would have continued. As it is, thousands of children were exposed to lead in the Flint water. No amount of exposure is safe, and the damage done to developing brains and bodies is permanent. Dr. Mona's team scored a victory of sorts, but it is a victory no one would ever wish for: the situation was completely avoidable and should never have occurred.An important theme of the book is the power of government, for good or for ill, and the democratic necessity that government serve all citizens, especially those who need it most. The lead water crisis in Flint was the result of a hasty and sloppily implemented decision to change the source of the town's water from Lake Michigan to the Flint River without adequate testing for, and without legally mandated treatments to address, higher levels of corrosiveness in the new water supply. The switch was instituted by an unelected city manager who was exclusively focused on "austerity" measures, placing cost-cutting above all other considerations. In the ensuing efforts to avoid responsibility, numerous other government agencies and individuals responsible for public health also lost their ethical bearings.Another inescapable theme is that our country is stronger because of immigrants like Dr. Mona and her family. She was born in England while her Iraqi father studied there. Rather than return to Saddam's brutal regime, he brought the family to Michigan while Dr. Mona was a young child. We are all better off because he did.The title, "What the Eyes Don't See," suggests many meanings. One is that our empirical knowledge is constrained by our cognitive categories. If you think that the only source of lead in children's' bloodstreams is lead-based paint, then you don't look for it in water and dismiss the possibility out of hand. Also, lead in water is not only colorless and invisible to the eye, it is also odorless and tasteless; it is a silent and unseen killer. And the devastating effects of lead exposure on intelligence, behavior and other outcomes are often latent, lying in wait potentially for many years.Dr. Mona is an elegant and graceful writer, and even those who know the basic outlines of the Flint story will find her account a page turner. She interweaves the main story about Flint with her own family story very effectively.It is an outrage that this book ever needed to be written, but given what happened in Flint I am very glad that Dr. Mona wrote it.

This book is good for teaching science, integrity, family values, persistence, the importance of good government and the virtues of public service, while also revealing the depths of depravity and carelessness sometimes found in our actual governments.

(My review from Goodreads.)I pre-ordered this book the moment it was available, because I knew it would be incredible, and I wanted to support Dr Mona — who I consider a friend, mind you. Owning this book, however, meant that I took a few extra weeks to get to it, because the pressure of not having a due date meant I kept putting it off in favour of library books that did have due dates.Having said that, I began it just a few days ago and devoured it eagerly. Some aspects of this books are not news to me — as a pediatrician with an MPH like Dr Mona, I'm well familiar with what lead does to children's developing brains, and also with toxic stress and the ravages of poverty. I've also visited Flint and seen firsthand some of the abject ruin in many neighbourhoods. (I was there to speak at a conference — what I saw was simply what I saw while out for a long morning run.). And, of course, I've heard about Dr Mona's role in this whole affair from the first time it hit the national news. Yes, she is as incredible as she appears from this book. Also, the story she tells of her own family is somewhat familiar — while I am not Chaldean, I'm a South Asian who was also born in the United Kingdom and whose family emigrated to the United States. Again, aspects of story I found familiar.So what did I find enthralling? Honestly, it was the drama of institutions. Not so much the state agencies that more or less blew it when it came to protecting the people of Flint. It was of the institutions that, in the end, decided to be on the right side of history: Hurley Medical Center, Michigan State University, etc. Dr Mona's descriptions of how people's names are dragged through the mud because they chose to speak up are not inaccurate — and far more common than we'd like to know. For me, this book was about that critical moment — what institutions would stand with her, and which would either hound her or choose to stay silent?There are many lenses through which one can read this book, and I would not presume to tell readers what their lens should be. Consider the above as you read this story—which you really should read—and ask yourself if the places you venerate in your own community will stand up for what's right when it becomes inconvenient.Ultimately, that is the story Dr Mona imparts to me.(PS Mona — well done.)

I realize that this guide is not all inclusive of the birds in Panama, but I am disappointed. I like that the guide is laminated and folds to take up a minimum of space. I watch a live bird feeder site in Panama and was disappointed in the first few minutes of using the guide. It has a lot of pictures of birds, but almost immediately, I saw three birds that are not in the guide.

Excellent! And very convenient to carry. This small guide really covers the basics. I have been able to identify every species I have encountered thus far using this small guide.

This is a handy picture guide to some of Panama's common birds. It is light and is easy to carry. Given the thousand or so bird species that can be seen in this small country, this fold-out guide can only cover some of the highlights awaiting a birder. The art is accurate although the birds are not to scale. For a casual nature watcher this is a decent introduction to what you might expect to see in Panama. True birders should get the field guide "The Birds of Panama" by Angehr and Dean.
